- 2 Bags Uncle Bens Brown rice
- 1 Bag of Shrimp
- 1 Bag of Carrots & Peas Frozen Vegetables
- 2 Eggs (or egg whites)
- Bean Sprout
In a large pan sauteed shrimp, seasoned as desire. Once cooked, add mixed vegetables, bean sprouts, and scallions. I leave the rice last because that particular brand is precooked and won't need much cooking time. In a separate pan, fried 2 eggs. You can substitute egg whites as a healthy alternative. Add your eggs to shrimp and vegetables medley, and let everything cook and simmer for about 5 minutes. Next, add rice to pan and cook for another 5 to 7 minutes. Occasional stir and mix well. The rice is flavored but you can always add your own spices to your taste. I added lemon peppered seasoning to my rice for a little extra flavor. I garnished with boiled sliced plantains.
A very simple dish that sure to impress your family and friends and tastes great. Notice I did not add any salt or MSG to my rice. Lemon Peppered seasoning taste great and enhance the natural flavor of food. Keep it simple.
