Haitian-Style Beef Stew (Bouyon Bef)

This is one of my favorites, Bouyon Bef a.k.a Beef Stew Haitian style. In the States it's called soup but it's more of vegetables, dumplings and beef chunks all in one pot and mixed into a hardy dish great from when temperatures drop or you're feeling sick. Of course you can exclude the meat and have a veggie stew. Just look at the picture don't it make you want to run to your grocery store for the ingredients. This is the perfect time to save this post for the next time you're Cosco or Walmart.

Forget the salad, yep, this is a great substitute or a meal by itself. All my friends up north or in those cold states, thank me later and keep reading.

Ingredients
  • 1 pound cubed beef
  • 2 limes cut in half
  • 1 large onion
  • 4 scallions
  • 4 garlic cloves (Crushed and chopped)
  • 2 tbs salt
  • ½ tbs black pepper
  • 2 Cloves
  • 2 Bay leaves
  • 2 prigs parsley
  • 1 thyme sprig
  • 2 carrots peeled and sliced
  • 2 celery sticks
  • 1 Malanga (see the picture below - cut into chunks)

  • 2 plantains
  • 1 yucca
  • 10 ounce of spinach
Soup Dumplings (Ingredients)
  • 2 Cup of Flour (White or Whole Wheat)
  • 1 tbs Oil (Vegetable or Olive)
  • 1 tsp All season spice
  • 1 tsp Nutmeg
  • 1 tsp Cayenne pepper
  • ½ cups of Water

Directions

Clean meats using Haitian meat cleaning method. (With lime and hot water).
Use the lime cut in half and rub it over your meat and after pour hot water over it. We pretty much clean all our meats that way. And if you don't have lime, use sour oranges, or pour lime juice over it. 

Marinate meat with scallions, garlic, salt and pepper for a minimum of 1 hour in the refrigerator.

While the meat is marinading make dumplings by mixing all the soup dumpling ingredients in a separate bowl. Once thoroughly mixed shape and set aside. 
You pretty much making flour meatballs. And no they don't have to be round or perfectly shaped.
In a a large pot, brown the meat with the marinade and brown over medium heat.

Add 1 quart water, cloves, bay leaves, parsley, and thyme to the pot and continue cooking on medium heat for 40 min. Stir the pot occasionally.

Add 3 quarts of water and bring the pot to a boil.

Add carrots, celery, malanga, plantains, yucca, and spinach and cook for 20 min.

Add the dumplings and simmer for 20 minutes uncovered. (* Note Do not stir when dumplings are in the pot. Stirring will cause them to fall apart.)
 
Epi dats it (and that's it). Don't let the steps scares you. You wont regret it. Like I said earlier, leave out the meat for a vegetarian version. Share this recipe with your friends or a great alternative to a salad for your dinner party (you see how I tied that in there). m
